Turn hanging around the house this March Break into your own personal staycation! Make your own buffet by #eatingallthethings. We're starting off with this lobster salad sandwich on fresh oatmeal bread, it consoles when faced with your friends vacay pics. Trust.
Oatmeal Bread:
1 cup large old fashioned oats
2 cups boiling water
2 1/4 teaspoons quick-rising yeast
1/2 cup lukewarm water
1/3 cup fancy molasses
1 1/2 tablespoons salt
1 tablespoon melted butter
6 cups all purpose flour
vegetable oil, for greasing bowl and pans
To a large bowl add oats and boiling water, and let rest for 10 minutes.
To a small bowl add 1/2 lukewarm water add yeast. Let rest for 10 minutes.
After the ten minutes have passed, to the oat mixture, add the molasses, salt, melted butter and yeasty water. Using a wooden spoon, stir to combine.
Slowly stir in 4 1/2 cups of flour, forming a wet shaggy dough.
Empty the dough out on to a lightly floured surface and knead for 6-8 minutes, adding more flour if dough becomes too sticky. Form dough into a nice ball.
Lightly grease a second large bowl and add the dough ball to it. Flip the dough ball around, lightly covering all sides with oil.
Cover bowl with a clean damp towel and place in a warm spot to rise for 1 hour.
Light grease two loaf pans and line with parchment paper.
Remove the tea towel and using your fist, punch dough a few times, deflating it's air.
Cut dough ball in two and mold each half into the prepared pan.
Cover pans with tea towel and let rise in a warm spot for another hour.
Preheat your oven to 375 degrees.
Bake loaves for 30 mins, then cover with foil and bake for 15 minutes longer.
For Lobster Salad Sandwich:
Slice and butter two thick slices of the gorgeous fresh oatmeal bread.
Remove the meat from a cooked lobster and using kitchen scissors, snip into bite-sized pieces. Add the lobster to a small bowl.
To the bowl add 1 tablespoon of mayonnaise and season with salt and pepper.
Squeeze with a hefty slice of lemon and mix.
Assemble your sandwich by laying down some lettuce or micro greens, thinly sliced tomato, lobster salad and a few leaves from a stalk of celery. Serve sandwich with some salty chips. (Definitely stick a couple of chips into the sandwich for a fun crunchy bite. )
